  • 1/4 teaspoon black pepper
  • 4 cups vegetable broth
  • 2 cups diced potatoes
  • 1 cup frozen peas
  • 1 cup corn
  • 1 cup plant-based milk
  • 1/4 cup flour
  • 2 tablespoons fresh parsley

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion, carrots, and celery, and sauté until softened.
  3. Stir in the garlic, thyme, rosemary, salt, and pepper.
  4. Add the vegetable broth and potatoes, and bring to a boil.
  5. Reduce heat and simmer for 15 minutes.
