  • 1/2 cup unsalted butter, melted
  • 4 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 3 large eggs
  • 2 teaspoons vanilla bean paste
  • 1/4 cup all-purpose flour

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a springform pan.
  3. In a large mixing bowl, beat the cream cheese until smooth. Gradually incorporate the sugar and mix until fully combined.
  4. Add sour cream, eggs, and vanilla bean paste. Mix until smooth.
  5. Gradually add flour and mix until just combined. Avoid overmixing.
  6. Pour the cheesecake batter over the crust in the springform pan.
  7. Bake for about 60 minutes or until the center is set but slightly jiggly.
  8. Remove from the oven and let it cool at room temperature before chilling in the refrigerator for at least 4 hours.

  • For a firmer cheesecake, let it chill overnight.
