Twice Baked Breakfast Potatoes

Delicious and hearty twice baked breakfast potatoes filled with turkey bacon and chicken ham, perfect for a filling breakfast or brunch.

  • 4 large potatoes
  • 6 slices turkey bacon
  • 1 cup cooked chicken ham, diced
  • 1 cup shredded cheese
  • 1/2 cup sour cream
  • 1/4 cup green onions, chopped
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash the potatoes and poke holes in them with a fork.
  3. Rub the potatoes with olive oil and sprinkle with salt.
  4. Bake the potatoes for about 45 minutes or until tender.
  5. Remove the potatoes from the oven and let them cool slightly.
  6. Cut the potatoes in half lengthwise and scoop out the flesh into a bowl.
  7. Add the turkey bacon, chicken ham, cheese, sour cream, green onions, pepper, and stir to combine.
  8. Stuff the potato skins with the mixture.
  9. Return the stuffed potatoes to the oven and bake for an additional 15 minutes.
  10. Serve hot and enjoy!

Notes

  • For a vegetarian option, replace turkey bacon with additional vegetables.
  • These potatoes can be prepared ahead of time and baked just before serving.
