Sweet Sausage Muffins

  • 1 pound sweet sausage
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup milk
  • 1/2 cup melted butter
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a skillet, cook the sweet sausage over medium heat until browned. Drain any excess fat.
  3. In a large bowl, mix together flour, sugar, baking powder, and salt.
  4. In another bowl, whisk together the eggs, milk, melted butter, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the cooked sausage.
  6. Divide the batter among the muffin cups, filling them about 3/4 full.
  7. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool in the tin for a few minutes before transferring to a wire rack.

Notes

  • These muffins can be made ahead of time and stored for up to three days.
  • Add chopped herbs for additional flavor.
