- 1 pound sweet sausage
- 2 cups all-purpose flour
- 1 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 1 cup milk
- 1/2 cup melted butter
- 1 teaspoon vanilla extract
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a skillet, cook the sweet sausage over medium heat until browned. Drain any excess fat.
- In a large bowl, mix together flour, sugar, baking powder, and salt.
- In another bowl, whisk together the eggs, milk, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the cooked sausage.
- Divide the batter among the muffin cups, filling them about 3/4 full.
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the tin for a few minutes before transferring to a wire rack.
