  • 1 medium spaghetti squash
  • 1 pound Italian sausage
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup spinach, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and remove the seeds. Drizzle with olive oil and season with salt and pepper.
  3. Place the squash cut-side down on a baking sheet and roast for 30-40 minutes, or until tender.
  4. Meanwhile, in a large pot, heat olive oil over medium heat. Add chopped onion and garlic, cooking until softened.
  5. Add the sausage to the pot, breaking it apart with a spoon, and cook until browned.
  6. Stir in the chicken broth, diced tomatoes, oregano, salt, and pepper. Bring to a boil, then reduce to simmer.
  7. Once the spaghetti squash is cooked, scrape the strands into the pot and add the chopped spinach. Stir well.
  8. Let the soup simmer for an additional 5-10 minutes before serving.

Notes

  • Feel free to add additional vegetables such as carrots or bell peppers for extra flavor.
  • This soup can be stored in the fridge for up to 3 days.
