- 1 medium spaghetti squash
- 1 pound Italian sausage
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 can (14.5 ounces) diced tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup spinach, chopped
- Preheat the oven to 400°F (200°C).
- Cut the spaghetti squash in half lengthwise and remove the seeds. Drizzle with olive oil and season with salt and pepper.
- Place the squash cut-side down on a baking sheet and roast for 30-40 minutes, or until tender.
- Meanwhile, in a large pot, heat olive oil over medium heat. Add chopped onion and garlic, cooking until softened.
- Add the sausage to the pot, breaking it apart with a spoon, and cook until browned.
- Stir in the chicken broth, diced tomatoes, oregano, salt, and pepper. Bring to a boil, then reduce to simmer.
- Once the spaghetti squash is cooked, scrape the strands into the pot and add the chopped spinach. Stir well.
- Let the soup simmer for an additional 5-10 minutes before serving.
