Slow-Cooker Chicken & Chickpea Soup

  • 1 tablespoon olive oil
  • 1 pound chicken breast, boneless and skinless
  • 1 can chickpeas, drained and rinsed
  • 4 cups chicken broth
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 cups spinach leaves, packed
  • Juice of 1 lemon

Instructions

  1. In a skillet, heat olive oil over medium heat. Add chicken breast and sear on both sides until browned.
  2. Transfer the seared chicken to the slow cooker.
  3. Add chickpeas, chicken broth, onion, carrots, celery, garlic, cumin, paprika, salt, and pepper. Stir to combine.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken is cooked through.
  5. Remove chicken, shred it, and return it to the soup.
  6. Stir in spinach and lemon juice before serving.

Notes

  • For extra flavor, consider adding herbs like thyme or parsley.
  • This soup can be made ahead of time and stored in the refrigerator.
