- 1 tablespoon olive oil
- 1 pound chicken breast, boneless and skinless
- 1 can chickpeas, drained and rinsed
- 4 cups chicken broth
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 cups spinach leaves, packed
- Juice of 1 lemon
- In a skillet, heat olive oil over medium heat. Add chicken breast and sear on both sides until browned.
- Transfer the seared chicken to the slow cooker.
- Add chickpeas, chicken broth, onion, carrots, celery, garlic, cumin, paprika, salt, and pepper. Stir to combine.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken is cooked through.
- Remove chicken, shred it, and return it to the soup.
- Stir in spinach and lemon juice before serving.
