Slow Cooker Lemon Herb Chicken and Rice

A delicious and comforting meal made with tender chicken, fragrant herbs, and fluffy rice.

Ingredients

  • 4 chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 lemon, juiced and zested
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat. Brown the chicken thighs on both sides for about 5 minutes.
  2. In the slow cooker, combine the rice, chicken broth, lemon juice, lemon zest, garlic, thyme, rosemary, salt, and pepper.
  3. Place the browned chicken thighs on top of the rice mixture.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours.
  5. Once cooked, shred the chicken and mix it with the rice, then serve.

Notes

  • For added flavors, marinate chicken in lemon juice and herbs for a few hours before cooking.
  • Adjust seasonings to your preference.
