Roasted Vegetable Orzo

A hearty and comforting dish featuring orzo pasta and a medley of roasted vegetables.

  • 1 cup orzo pasta
  • 2 cups mixed vegetables (zucchini, bell peppers, carrots)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/4 cup grated parmesan cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the mixed vegetables with olive oil, garlic powder, oregano, salt, and pepper, and spread them on a baking sheet.
  3. Roast the vegetables for 20-25 minutes until tender.
  4. Meanwhile, cook the orzo according to package instructions.
  5. Combine the roasted vegetables with the cooked orzo and stir in the parmesan cheese.
