Roasted Chicken, Sweet Potato, and Kale Bowls

Ingredients

  • 2 cups cooked roasted chicken, shredded
  • 2 medium sweet potatoes, cubed
  • 4 cups kale, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, toss the sweet potatoes with olive oil, garlic powder, paprika, salt, and pepper.
  3. Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes until tender.
  4. In the last 10 minutes of roasting, add the kale to the baking sheet to wilt.
  5. In a serving bowl, layer the roasted sweet potatoes, kale, and shredded chicken.
  6. Serve warm and enjoy!
