  • 2 cups all-purpose flour
  • 1 cup powdered sugar
  • 1/2 cup ground almonds
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 cup raspberry jam

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, cream together the butter and powdered sugar.
  3. Add the ground almonds, vanilla extract, and salt, and mix well.
  4. Gradually add the flour, mixing until just combined.
  5. Chill the dough for at least 30 minutes.
  6. Roll out the dough and cut out shapes with a cookie cutter.
  7. Place half of the cookies on a baking sheet and spread raspberry jam on each.
  8. Top with the remaining cookies and bake for 12-15 minutes or until golden.
  9. Allow to cool before serving.
