  • 1 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 2 cups all-purpose flour
  • 1/2 cup almond flour
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup raspberry jam

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and powdered sugar until smooth.
  3. Mix in the vanilla extract.
  4. In another bowl, sift together the all-purpose flour, almond flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
  6. Chill the dough for 30 minutes.
  7. Roll out the dough on a floured surface and cut into shapes.
  8. Place half of the cookies on a baking sheet and spoon a small amount of raspberry jam onto each cookie.
  9. Top each jam-covered cookie with another cookie shape.
  10. Bake for 12-15 minutes until lightly golden.
  11. Allow to cool before dusting with powdered sugar.

Notes

  • For a nut-free version, use all-purpose flour instead of almond flour.
  • Store cookies in an airtight container for better freshness.
