- 1 cup unsalted butter, softened
- 1 cup powdered sugar
- 2 cups all-purpose flour
- 1/2 cup almond flour
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup raspberry jam
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream together the butter and powdered sugar until smooth.
- Mix in the vanilla extract.
- In another bowl, sift together the all-purpose flour, almond flour, baking powder, and salt.
- Gradually add the dry ingredients to the butter mixture, mixing until just combined.
- Chill the dough for 30 minutes.
- Roll out the dough on a floured surface and cut into shapes.
- Place half of the cookies on a baking sheet and spoon a small amount of raspberry jam onto each cookie.
- Top each jam-covered cookie with another cookie shape.
- Bake for 12-15 minutes until lightly golden.
- Allow to cool before dusting with powdered sugar.
