- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 3 cups cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup pumpkin puree
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1/4 teaspoon salt
- Preheat the oven to 325°F (160°C).
- In a bowl, combine graham cracker crumbs and melted butter. Press into the bottom of a springform pan.
- In a large mixing bowl, beat the cream cheese and sugar until smooth. Add vanilla, and then incorporate the eggs one at a time.
- Divide the mixture into two bowls. To one bowl, add pumpkin puree and spices; mix until combined.
- Pour half of the plain cheesecake mixture over the crust, then dollop pumpkin mixture on top. Repeat with the remaining mixtures, using a knife to swirl them together.
- Bake for 60 minutes, or until the center is set. Let cool in the oven with the door ajar.
- Refrigerate for at least 4 hours or overnight before serving.
