  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 3 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup pumpkin puree
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, combine graham cracker crumbs and melted butter. Press into the bottom of a springform pan.
  3. In a large mixing bowl, beat the cream cheese and sugar until smooth. Add vanilla, and then incorporate the eggs one at a time.
  4. Divide the mixture into two bowls. To one bowl, add pumpkin puree and spices; mix until combined.
  5. Pour half of the plain cheesecake mixture over the crust, then dollop pumpkin mixture on top. Repeat with the remaining mixtures, using a knife to swirl them together.
  6. Bake for 60 minutes, or until the center is set. Let cool in the oven with the door ajar.
  7. Refrigerate for at least 4 hours or overnight before serving.

Notes

  • Serve with whipped cream for added indulgence.
  • This cheesecake can be made a day ahead of time.
