  • 1 can pumpkin puree
  • 1 pound ground turkey
  • 1 can black beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 cup diced tomatoes
  • 1 cup bell pepper, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cups vegetable broth
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté onions and garlic until translucent.
  2. Add ground turkey and cook until browned.
  3. Stir in the pumpkin puree, tomatoes, bell pepper, and beans.
  4. Add the vegetable broth and spices, then bring to a boil.
  5. Reduce heat and let simmer for 30 minutes.
  6. Season with salt and pepper to taste before serving.

Notes

  • This chili can be made vegetarian by omitting the turkey.
  • Feel free to add more spices for extra heat!
