  • 1 cup grated Parmesan cheese
  • 1 cup bread crumbs
  • 1/4 cup chopped fresh basil
  • 2 eggs
  • 1/4 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a shallow dish, combine the bread crumbs, Parmesan cheese, garlic powder, salt, pepper, and basil.
  3. Set up a breading station with three shallow dishes: one for flour, one for beaten eggs, and one for the breadcrumb mixture.
  4. Dip each chicken breast in flour, then in the eggs, and finally in the breadcrumb mixture, pressing to adhere.
  5. Heat olive oil in a large skillet over medium heat. Fry each chicken cutlet until golden brown, about 4-5 minutes per side.
  6. Transfer to a baking sheet and bake in the preheated oven for 10-15 minutes, or until fully cooked.
  7. Serve hot with additional basil or Parmesan, if desired.

Notes

  • For extra flavor, let the chicken marinate in olive oil and basil for 30 minutes before breading.
  • Feel free to add other spices to the breadcrumb mixture, like paprika or oregano.
