One Pot Chicken and Rice

A simple and delicious one pot recipe that combines chicken and rice for a comforting meal.

  • 2 cups long-grain rice
  • 4 cups chicken broth
  • 1 pound boneless, skinless chicken thighs
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup frozen peas

Instructions

  1. In a large pot, heat oil over medium heat. Add diced onion and garlic and sauté until soft.
  2. Add chicken thighs and cook until browned on both sides.
  3. Stir in rice, broth, paprika, oregano, salt, and pepper. Bring to a boil.
  4. Reduce heat, cover, and simmer for 20 minutes or until the rice is cooked.
  5. Stir in the peas and let sit for a few minutes before serving.
