- 2 cups long-grain rice
- 4 cups chicken broth
- 1 pound boneless, skinless chicken thighs
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup frozen peas
- In a large pot, heat oil over medium heat. Add diced onion and garlic and sauté until soft.
