No Bake Mini Biscoff Cheesecakes

Delicious and easy no bake mini cheesecakes with a Biscoff twist!

Ingredients

  • 1 cup Biscoff cookies, crushed
  • 4 tablespoons unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup whipped cream
  • 2 tablespoons Biscoff spread, for topping

Instructions

  1. In a bowl, combine the crushed Biscoff cookies and melted butter. Mix until well combined.
  2. Press the mixture into the bottom of mini cheesecake molds to form the crust.
  3. In another bowl, beat the softened cream cheese until smooth.
  4. Add powdered sugar and vanilla extract to the cream cheese and mix until fully incorporated.
  5. Fold in the whipped cream gently until combined.
  6. Pour the cheesecake mixture over the crust in each mold.
  7. Chill in the refrigerator for at least 4 hours or until set.
  8. Before serving, drizzle top with Biscoff spread.

Notes

  • For added flavor, mix in some cinnamon with the crust.
  • These cheesecakes can be made a day in advance.
