- 12 lasagna noodles
- 2 cups ricotta cheese
- 3 cups fresh spinach, chopped
- 2 cups mushrooms, sliced
- 2 cups mozzarella cheese, shredded
- 1 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 2 cups marinara sauce
- 1 tablespoon olive oil
- Preheat your oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions; drain and set aside.
- In a large skillet, heat olive oil over medium heat. Sauté garlic and mushrooms until mushrooms are tender.
- Add spinach and Italian seasoning, cooking until spinach wilts.
- In a 9×13 inch baking dish, spread a layer of marinara sauce on the bottom.
- Lay 4 lasagna noodles over the sauce, then add half of the ricotta mixture, followed by half of the sautéed vegetables, and a layer of mozzarella.
- Repeat the layers, finishing with noodles, sauce, and a layer of mozzarella and Parmesan cheese on top.
- Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes until cheese is bubbly.
- Let it cool for 10 minutes before serving.

- For extra flavor, add red pepper flakes to the sauce.
