Mushroom And Spinach Lasagna Recipe

A delicious and comforting mushroom and spinach lasagna recipe, perfect for any occasion.

  • 12 lasagna noodles
  • 2 cups ricotta cheese
  • 3 cups fresh spinach, chopped
  • 2 cups mushrooms, sliced
  • 2 cups mozzarella cheese, shredded
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 2 cups marinara sauce
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions; drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Sauté garlic and mushrooms until mushrooms are tender.
  4. Add spinach and Italian seasoning, cooking until spinach wilts.
  5. In a 9×13 inch baking dish, spread a layer of marinara sauce on the bottom.
  6. Lay 4 lasagna noodles over the sauce, then add half of the ricotta mixture, followed by half of the sautéed vegetables, and a layer of mozzarella.
  7. Repeat the layers, finishing with noodles, sauce, and a layer of mozzarella and Parmesan cheese on top.
  8. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes until cheese is bubbly.
  9. Let it cool for 10 minutes before serving.

Notes

  • For extra flavor, add red pepper flakes to the sauce.
  • Make it vegetarian by ensuring the sauce is meat-free.
