Mini Jalapeño Popper Egg Rolls

These Mini Jalapeño Popper Egg Rolls are a delectable twist on the classic popper, featuring rich flavors enhanced by turkey bacon.

  • 1 package egg roll wrappers
  • 8 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped jalapeños, seeds removed
  • 6 slices turkey bacon, cooked and crumbled
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon fresh cilantro, chopped
  • 1 tablespoon olive oil

Instructions

  1. In a bowl, mix together the cream cheese, cheddar cheese, jalapeños, turkey bacon, garlic powder, onion powder, and cilantro until well combined.
  2. Take an egg roll wrapper and place 2 tablespoons of the filling in the center.
  3. Fold the corners of the wrapper over the filling, then roll it tightly into an egg roll shape.
  4. Brush the outside of the roll with olive oil.
  5. Heat a deep fryer or large pot filled with oil to 350°F (175°C).
  6. Fry the egg rolls in batches until golden brown and crispy, about 3-4 minutes.
  7. Remove and drain on paper towels.

Notes

  • For extra spice, leave some seeds in the jalapeños.
  • Serve with your favorite dipping sauce for an added kick.
