Mexican Lasagna Recipe

This Mexican lasagna recipe is a delicious twist on a classic dish, perfect for a comforting meal.

  • 1 pound ground beef
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 2 cups salsa
  • 12 lasagna noodles
  • 2 cups shredded cheese
  • 1 tablespoon taco seasoning
  • 1 bell pepper, chopped
  • 1 onion, chopped

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, cook the ground beef with the onion and bell pepper until browned.
  3. Stir in the black beans, corn, salsa, and taco seasoning, and simmer for 5 minutes.
  4. In a baking dish, layer 4 lasagna noodles, 1/3 of the meat mixture, and 1/2 cup of cheese. Repeat the layers, finishing with noodles and cheese on top.
  5. Bake for 30 minutes or until the cheese is melted and bubbly.

Notes

  • For a vegetarian version, substitute ground beef with lentils or additional beans.
  • Feel free to add vegetables like zucchini or spinach.
