  • 4 cups chicken broth
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup pasta (optional)
  • 2 cups spinach, fresh
  • 1 tablespoon lemon juice

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onion, carrots, celery, and garlic; sauté until vegetables are softened.
  3. Stir in diced chicken and cook until no longer pink.
  4. Pour in chicken broth and bring to a simmer.
  5. Add thyme, oregano, salt, and pepper; let simmer for 20 minutes.
  6. If using, add pasta and cook until tender.
  7. Add spinach and lemon juice just before serving.

Notes

  • This soup can be made ahead of time and stored in the refrigerator.
