Ingredients

  • 6 slices turkey bacon
  • 1 pound boneless chicken breasts
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups carrots, sliced
  • 1 cup celery, diced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add turkey bacon and cook until crispy. Remove and crumble.
  2. Add chicken breasts to the pot and cook until browned on both sides. Remove from pot and shred.
  3. Add onion and garlic to the pot, sauté until onion is translucent.
  4. Pour in chicken broth, then add carrots, celery, thyme, salt, and pepper.
  5. Bring to a boil, reduce heat, and simmer for 30 minutes.
  6. Add shredded chicken and crumbled bacon back into the pot, stir, and serve hot.
