Low Carb Bacon Cheeseburger Casserole

Ingredients

  • 1 pound ground beef
  • 8 ounces bacon
  • 1 cup shredded cheddar cheese
  • 1 cup diced tomatoes
  • 1 onion, chopped
  • 4 eggs
  • 1/2 cup heavy cream
  • 2 teaspoons garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the bacon until crispy, then remove and crumble.
  3. In the same skillet, cook the ground beef with the chopped onion until browned.
  4. In a large bowl, whisk together the eggs and heavy cream, then add garlic powder, paprika, salt, and pepper.
  5. Add the cooked meat mixture, crumbled bacon, diced tomatoes, and half of the cheddar cheese to the egg mixture.
  6. Pour the mixture into a greased casserole dish and top with the remaining cheddar cheese.
  7. Bake for 25-30 minutes or until set and golden brown on top.

Notes

  • For a spicier version, add jalapeños.
  • Feel free to substitute with your favorite cheese.
