Loaded Cheddar Ranch Beef and Sweet Corn Rotini Bake

A delicious and hearty baked dish featuring seasoned beef, sweet corn, and rotini pasta, all coated in a rich cheddar ranch sauce.

  • 1 pound ground beef
  • 8 ounces rotini pasta
  • 1 cup sweet corn (canned or frozen)
  • 1 cup sharp cheddar cheese, shredded
  • 1 packet ranch seasoning mix
  • 2 tablespoons olive oil
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Add ground beef and cook until browned.
  3. Stir in ranch seasoning, garlic powder, and black pepper.
  4. Cook rotini according to package instructions; drain.
  5. In a large bowl, combine cooked rotini, beef mixture, corn, sour cream, milk, and half of the cheddar cheese.
  6. Transfer the mixture to a greased baking dish and top with remaining cheddar cheese.
  7. Bake for 25-30 minutes until bubbly and golden brown on top.

Notes

  • For an extra creamy texture, add more sour cream.
  • Feel free to mix in additional vegetables like bell peppers or spinach.
