Leftover Cranberry Sauce Coffee Cake Muffins

Delicious and easy muffins made with leftover cranberry sauce, perfect for breakfast or a snack.

  • 1 cup leftover cranberry sauce
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • ½ cup vegetable oil
  • ¾ cup buttermilk
  • ½ teaspoon cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the flour, sugar, baking powder, salt, and cinnamon.
  3. In another bowl, whisk together the eggs, buttermilk, oil, cranberry sauce, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix just until combined.
  5. Fill muffin cups about ¾ full and bake for 20-25 minutes or until a toothpick comes out clean.
  6. Let cool for a few minutes before removing them from the tin.
