Italian Penicillin Soup

A delicious and hearty soup featuring turkey bacon and chicken ham for a comforting meal.

Ingredients

  • 4 slices turkey bacon
  • 1 cup chicken ham, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 medium carrots, sliced
  • 2 stalks celery, diced
  • 8 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon black pepper
  • 2 cups egg noodles
  • 1 cup frozen peas
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. Add the onions, garlic, carrots, and celery to the pot. Sauté until the vegetables are tender.
  3. Pour in the chicken broth and bring to a boil.
  4. Add the chicken ham, thyme, and black pepper. Reduce heat to a simmer.
  5. Stir in the egg noodles and cook until tender.
  6. Add the frozen peas and cook for an additional 5 minutes.
  7. Serve hot, garnished with chopped parsley and crumbled turkey bacon.
