  • 1 cup pumpkin puree
  • 1 cup Greek yogurt
  • 1/2 cup honey or maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 1/2 cups whole wheat flour

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the pumpkin puree, Greek yogurt, honey or maple syrup, eggs, and vanilla until well combined.
  3. In a separate bowl, whisk together the dry ingredients: baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow to cool before serving.

Notes

  • Make sure to use pure pumpkin puree, not pumpkin pie filling.
  • These muffins can be stored for up to a week in an airtight container.
