Gingerbread Cream Pie

  • 1 1/2 cups gingerbread cookie crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup heavy cream
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground ginger
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 cup whipped cream for topping

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine gingerbread cookie crumbs and melted butter, then press into the bottom of a pie dish.
  3. Bake the crust for 10 minutes, then let it cool.
  4. In another bowl, whip heavy cream until peaks form. Set aside.
  5. In a mixing bowl, beat softened cream cheese until smooth, then gradually add powdered sugar, vanilla extract, ground ginger, cinnamon, and nutmeg.
  6. Fold in the whipped cream into the cream cheese mixture until well combined.
  7. Pour the cream mixture into the cooled crust and smooth the top.
  8. Chill for at least 4 hours or overnight.
  9. Top with additional whipped cream before serving.

Notes

  • This pie is best served chilled.
  • For a stronger ginger flavor, add more ground ginger.
