  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 1 jar cherry pie filling
  • 1 ounce chocolate shavings

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line a 15×10 inch baking pan with parchment paper.
  2. In a large bowl, beat the eggs and sugar until thick and pale.
  3. Sift together flour, cocoa powder, baking powder, and salt; gently fold into the egg mixture.
  4. Spread the batter evenly in the prepared pan.
  5. Bake for about 15 minutes or until the cake springs back when touched.
  6. Let the cake cool slightly, then invert onto a clean kitchen towel dusted with powdered sugar.
  7. Roll the cake up in the towel from the short end and let it cool completely.
  8. Whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
  9. Unroll the cake, spread with heavy cream, and top with cherry pie filling.
  10. Re-roll the cake gently, wrap it in plastic wrap, and refrigerate for at least 2 hours before serving.
  11. Before serving, dust with cocoa powder and top with chocolate shavings.
