- 1 onion chopped
- 3 cloves garlic minced
- 1 tablespoon fresh ginger grated
- 2 tablespoons red curry paste
- 1 can coconut milk
- 4 cups vegetable broth
- 2 cups dumplings (frozen or fresh)
- 2 cups bok choy chopped
- 1 tablespoon soy sauce
- 1 teaspoon lime juice
- In a large pot, heat the vegetable oil over medium heat.
- Add the onion, garlic, and ginger, and sauté until fragrant.
