Easy Thai Coconut Curry Dumpling Soup

A warm and comforting soup bursting with coconut and curry flavors.

Ingredients

  • 1 tablespoon vegetable oil
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 2 tablespoons red curry paste
  • 1 can coconut milk
  • 4 cups vegetable broth
  • 2 cups dumplings (frozen or fresh)
  • 2 cups bok choy chopped
  • 1 tablespoon soy sauce
  • 1 teaspoon lime juice

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the onion, garlic, and ginger, and sauté until fragrant.
  3. Stir in the red curry paste and cook for another minute.
  4. Pour in the coconut milk and vegetable broth, and bring to a simmer.
  5. Add the dumplings and bok choy, cooking until dumplings are heated through.
  6. Season with soy sauce and lime juice before serving.

Notes

  • Adjust the spiciness by adding more or less red curry paste.
