  • 1 ½ cups granulated sugar
  • ½ cup cocoa powder
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.
  3. In a large bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  4. Add the eggs, milk, oil, and vanilla, and mix until well combined.
  5. Slowly stir in the boiling water until the batter is smooth.
  6. Divide the batter evenly between the prepared pans.
  7. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  8. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  9. Prepare the filling by whipping cream until stiff peaks form and mixing in vanilla.
  10. Once the cakes are cool, slice each cake in half horizontally to create four layers.
  11. Spread some of the whipped filling between each cake layer, stacking them as you go.
  12. Frost the top and sides of the cake with the remaining whipped filling.
  13. Chill in the refrigerator before serving.

Notes

  • For extra chocolate flavor, add chocolate shavings on top.
  • This cake can be made a day in advance and stored in the refrigerator.
