  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Add the softened butter and mix until well combined.
  4. Stir in the brown sugar, eggs, and vanilla extract until fully incorporated.
  5. In a separate bowl, whisk together the baking soda, salt, flour, and ground cinnamon.
  6. Gradually add the dry ingredients to the banana mixture, stirring until just combined.
  7. If using, fold in the chopped walnuts.
  8. Pour the batter into the prepared loaf pan and smooth the top.
  9. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
