Chicken and Corn Chowder

  • 1 pound chicken breast, cooked and shredded
  • 4 slices turkey bacon, chopped
  • 1 cup corn, frozen or fresh
  • 2 cups potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same pot, sauté the onion and garlic until fragrant and translucent.
  3. Add the diced potatoes and corn, then pour in the chicken broth.
  4. Bring to a boil, then reduce the heat and simmer until the potatoes are tender.
  5. Stir in the shredded chicken, heavy cream, salt, pepper, and thyme. Cook until heated through.
  6. Serve hot, garnished with the crispy turkey bacon.

Notes

  • This chowder can be made ahead and stored in the fridge for up to three days.
  • For added flavor, consider using smoked turkey bacon.
