  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 2 cups sliced apples
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice
  • 1/4 cup brown sugar
  • 1/2 cup oats
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine crushed graham crackers, granulated sugar, and melted butter. Press into the bottom of mini cheesecake pans.
  3. In another bowl, beat the cream cheese until smooth. Gradually add powdered sugar and vanilla extract, and mix until well combined.
  4. Add eggs one at a time, mixing well after each addition.
  5. In a separate bowl, combine sliced apples, cinnamon, lemon juice, brown sugar, oats, and nuts.
  6. Pour the cream cheese mixture over the crust, then layer the apple mixture on top.
  7. Bake for 25-30 minutes or until set. Allow to cool before serving.
