- 1 cup crushed graham crackers
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 eggs
- 2 cups sliced apples
- 1 teaspoon cinnamon
- 1 tablespoon lemon juice
- 1/4 cup brown sugar
- 1/2 cup oats
- 1/4 cup chopped nuts (optional)
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine crushed graham crackers, granulated sugar, and melted butter. Press into the bottom of mini cheesecake pans.
- In another bowl, beat the cream cheese until smooth. Gradually add powdered sugar and vanilla extract, and mix until well combined.
- Add eggs one at a time, mixing well after each addition.
- In a separate bowl, combine sliced apples, cinnamon, lemon juice, brown sugar, oats, and nuts.
- Pour the cream cheese mixture over the crust, then layer the apple mixture on top.
- Bake for 25-30 minutes or until set. Allow to cool before serving.
