  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 cup apple cider
  • 1 teaspoon vanilla extract
  • 1/2 cup brown sugar
  • 1/4 cup sugar for coating

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, cream together the butter and granulated sugar until light and fluffy.
  4. Add the eggs, one at a time, beating well after each addition.
  5. Mix in the apple cider and vanilla extract.
  6. Gradually add the dry ingredients to the wet ingredients until just combined.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 60-70 minutes, or until a toothpick inserted comes out clean.
  9. Let cool for 10 minutes before transferring to a wire rack.
  10. While still warm, coat in a mixture of brown sugar and granulated sugar.

Notes

  • For an extra cinnamon flavor, add more cinnamon to the sugar coating.
